Blackberry and Apple Tart



    Ingredients:

  • 2 cups flour
  • 1/2 cup Irish butter
  • 1 pinch of salt
  • Ice cold water
  • 3 cups fresh blackberries
  • 3 cups peeled sliced apples
  • 1/2 cup sugar
  • 2 tablespoons cream flour
  • 2 tablespoons Irish butter


  • Preparation:

    1. Make short crust pastry using flour, Irish butter and ice water then chill until stiff. Roll out half the pastry, line a 9 inch pie tin and chill in refridgerator.
    2. Mix blackberries, apples, sugar and flour together, adding a pinch of salt. Place on the chilled pastry and dot with the butter. Chill again.
    3. Roll out the second half of the pastry. Place over fruit dampen edges before sealing.
    4. Seal the edges by fluting and prick the top to allow steam to escape.
    5. Place pie plate on baking sheet and bake at 425 degrees for 15 minutes. Reduce heat to 375 degrees and bake for 20-30 minutes or until top is nicely browned.
