Potato Bread


  • 1 cup of flour
  • 6 large potatoes
  • 1 egg
  • 1 bunch of scallions
  • 2 tablespoons of Irish butter
  • 1 cup of milk
  • Salt to taste
  • Peel, boil and mash the potatoes.

  • Preparation:

    1. Finely chop the scallions and add to a large bowl. Add the mashed potatoes, half the flour and butter. Mix well with a wooden spoon.
    2. Blend egg and milk together. Add this in small amounts to bind the potatoes together into a dough. Add a pinch of salt to taste.
    3. Roll out the mixture on a floured surface to around an inch thick.
    4. Use a 10" plate as a guide to cut a circle out of the dough. Remove excess potato dough from around perimeter of this circle. Cut the dough into 8 triangles.
    5. Cook on hot grill or pan for 3 - 4 minutes each side until golden brown. Serve hot with butter on top.
